Hi…I’m Estella Williams, and I was diagnosed with Celiac Disease at the age of 15. I had experienced symptoms for more than 3 years before I finally received a diagnosis…and let me tell you, that last year leading up to my diagnosis was rough.

Once I found out that I had a diagnosis for a disease that I could mitigate simply by changing my diet, I felt both a sense of relief and empowerment. I was excited to finally start feeling better! But we all know that having to follow a strict gluten-free diet isn’t easy…especially when you are a teenager who loves to travel, experience as much of the world as possible, and hang out with friends. There was one thing I was especially determined about: I didn’t want to put myself in a bubble to avoid gluten…I wanted to learn to live a full life in spite of gluten.

I immediately embarked on a gluten free lifestyle; and every day, I hoped and expected that I would feel better. Unfortunately, my gut was so destroyed by that point that it took at least 6 months until I really started to feel much improvement, and even then, I wasn’t totally better. And while that time was difficult and frustrating, it gave me the opportunity and, more importantly, the motivation to learn everything I could about Celiac Disease to find new ways to improve my health, my nutrition, and my healing. I read books, wrote research papers, scoured the web, immersed myself in medical journals, joined groups on social media, and met with several doctors. And all of that work paid off.

Eventually I began to feel better, and that’s when I realized just how very much I had learned since the day I had received my diagnosis. Through research and experience, I had learned some “secrets” and tips to help me manage life without gluten. It had all seemed so overwhelming at the beginning; but by the time I started to feel better, my tips and tactics were all part of my everyday life. I knew I could use my experience as a teen who’s living with Celiac Disease to help other people (teens and young adults, especially) who are learning that they, too, need to adopt a gluten-free lifestyle.

That’s why I became a certified Nutrition Coach and developed this simple video course covering all the basics of a gluten-free lifestyle in a straight-forward, no-nonsense, friend-to-friend atmosphere. I want to help as many people as possible avoid some of the pitfalls that I had to go through. I want to help every gluten-intolerant person who feels overwhelmed instead to have some tools so they can “avoid living in a bubble” and live a full life that’s totally gluten-free. I want to create a safe space for people to find easy-to-implement plans and encouragement from someone else who totally understands first-hand just how incredibly emotionally and physically challenging this lifestyle can be.
